Your road noise is coming from the fact that it is a roadster. Sound deadening a roadster is putting lipstick on a pig.
That said, I did mat my trunk, but only because I'm running a system and wanted as much insulation in there as possible. I did not do it for road noise reduction, as all that noise is going to come mostly through your soft top.
