I'll be very surprised if they filled up, deliver to you, then in 200 miles you got low coolant and there are no leaks, I would really assume they didn't truly fill up before give to you.
For the record I got my car delivered with 11 miles? it has ~350 miles now, haven't gotten low coolant, will keep an eye on it for sure...
