Big difference, especially when marinating over night. All the combinations I used worked well but the flavor could be improved. Any suggestions welcomed.

For LB we always smothered it in something out of the cupboard and then added a bunch of acid. Citrus juice or vinegar. Let that break down the fibers over night if possible. Low and slow heat
