As noted, your taste is the controlling one.
My personal preference would be (1) carbon black with ivory nappa; and (2) Dark Graphite with ivory Nappa.
As AP said, contrast between exterior and interior works best (IMHO). I am very bored with black interiors.
BTW...I hope you are also getting the leather dash. It is Nappa and also covers the door tops and it really finishes off the interior (not quite as well as the full Merino but pretty close).
