I admit that we've never gotten even close to doing any off roading in my wife's M40i X3, but I'm sure I imagined myself doing so when I was deciding to buy it.

Short answer, no most of us don't need SUVs let alone full M versions, but it's exciting to imagine the possibilities.
Why we need an SUV:
1. ease of entry/exit. Anyone over 60 or with a bad back can relate.
2. room for luggage and passengers to/from airport and touring.
3. room for equipment/supplies (ie peat moss) for working in yard, borrowing pressure washer, etc.
4. room for golf clubs and friends when traveling to course an hour away.

Our 650 is the “fun” car but unfortunately can’t do any of above. The SUV is the “workhorse”. Do we need an M or even an M50i, NO but its nice to have that option.
