It depends which wheel you're talking about and how wide it is.
You can only run so wide of a tire based upon how wide your wheel is. So BMW probably didn't go with the 285/30/20 because the width of that is over 11" (11.2" to be exact) whereas the 275/30/20 is only 10.8" wide. Unless your wheels are over 9" wide then I'd stick with the 275s, IMO.
For example: My BMW M Sport 664M wheels are 19x9 (9" wide) and the widest tire you'd ideally want to run is a 275. You could probably fit a 285 but it wouldn't look and fit as good as the 275.
