I ask because I have a 2019 540 with the M package and it has the shadowline trim. We found my friend a 2017 540 with the M package but it's all chrome around the windows. And the seats have the leg extension but it's manual, not electric. This all seems odd to me, but maybe that's normal? And the car is $40k with 11k miles on it, so it's a steal in my mind but that chrome is weirding me out ...

BMW change package every model year, at least my year (2019, I just have sports line not M), it wasn't possible (or I didn't see it any way), isn't it pretty easy to swap out the chrom to shadow anyway?

I don't think it's easy to swap it out, I think a lot of people have their chrome wrapped or plasti dipped. I find plasti dip a pain, I can't do it well.
