Bluetooth control over smartphone?

Is it only possible to control the start/stop of video and shutter of the camera?

I want something capable of zoom/focus (rotary thumbwheel). Or programable buttons control.

I'd even take a wired option, USBc.

But I can't find a damn thing. Just the typical china bluetooth buttons in various shapes and colorings.

Use an app on your phone.

So I had a Pixel and it came with headphones.
I have a S21 ultra now.
Plugged the buds in and for S&G pushed the volume and pause buttons. Volume buttons act as a shutter button. So that's all i'm after.
I'm kinda wondering if all usb-c headphones would act the same, as long as there's a volume control button.
