Word to the wise on this - partially cook the bacon on this ahead of time. Scallops only take a minute or two per side. That doesn't give the bacon enough time so most will end up overcooking the scallop to finish the bacon.

Partially cook the bacon on low, half way maybe a little more - rendering some of the fat out will also minimum bacon "shrinkage" once its cooked with the scallop. By the time the scallop is done the bacon will be perfect

Been a minute but I return with something new and extremely tasty....

So As you all know I am a big time Smoker and Griller! Labor Day I smoked a generous amount of Chicken as seen here:

Yesterday, I took the leftovers and prepared an amazing Chicken Salad recipe that I saw on a Food Network series called Miss Brown (definitely DVR that show!)

So instead of using typical rotisserie or baked chicken, I used my Smoked Chicken. OMG!!!!!!!!! It is so foking delicious!!! Of course you have to enjoy Chicken Salad. I am VERY picky about the kind I like or eat. Some can be too much Mayonnaise or too bland. But this recipe is sooooo good, I plan to enter it in a upcoming contest next month.

Let me know if anyone is interested and I will post up ingredients.

Double parking isn't rigidly enforced in Brooklyn and Queens; plus the original Nathan's is wide open to the street this time of year. I had my eye on my car the entire time. 😉

I can confirm they don't taste the same. I was under the impression that the dogs themselves were slightly different, but someone chimed in here voicing a theory that the 100+ year old rollers are seasoned and that's the difference. 🤷🏻*♂️

Nice to see more Chicken Salad fans!

So here are all of the ingredients:

I modified it slightly but the results are amazing:

Cooked Chicken (@6-7 thighs or breasts)
Red or Orange Bell Pepper (half)
Celery 3
Garlic Powder 1tsp
Paprika 1tsp
Miracle Whip (my preference) or Mayo 1.5 cups
Honey Dijon Mustard qtr cup
Honey 2 Tbsp
Salt (if needed)
Pepper half tsp

All veggies should be chopped fine.
Mix thoroughly.
Chill for at least couple of hours.
