Ride height difference between seasons
So I have 205/55 -16 square winter setup right now. And it seems lower then my summer setup of
18x8 235/40ZR -18 and 18x9.5 265/35ZR -18 Would 60 sidewall get me the higher ride or would the speedometer be off too much?

The 205/55/16 is about half an inch smaller than the summer setup. This will make it physically lower. And, larger sidewalls often make cars look lower too. The 205/60 is a bit larger than your summer setup and it will probably work depending on your suspension setup.

I believe its 25.4 to 25.7 inches, so .3 inches taller

Since we're talking diameter here, you're gonna have to divide that number in half.
