Oil temp and ignition timing

Good evening
As my 3 takes long to heat up and only start pulling the car hard when my oil temp is at 80° c or 178°f does the dme allow full ignition timing at those temps?
I have the performance steering wheel so I can see exactly what the temps are.
My car doing 8 back to back pulls only saw an oil temp is 97°c or 206° f.
Is there a temperature at which the ECU allows full ignition timing?
Water temp stays in the 76°c or 176°f range.

Asking this because I logged the car with 96 ocatane fuel with 5 l ethanol and only got about 30°ignition. Car has FBO and a aggressive tune
